1 each of 1 ½ lbs lobster
½ cup Minced seedless cucumbers
½ tzatziki yogurt
Pinch minced fresh mint
Pinch minced dill
To taste salt and white pepper
3 oz Micro greens
2 oz Demi-Oil
1 Tbs Olive Oil
Blanch lobster in boiling water for approx. 1 ½ minutes, shock in ice water for a few minutes to stop cooking, split the head and tail and place the tail aside.
In a bowl mix cucumbers and tzatziki yogurt and seasoned with dill, mint salt and pepper, mix well and set aside.
On center of plate place micro greens and top with tzatziki, take lobster tail out of the shell and slice into medallions, top tzatziki with lobster medallions and drizzle with oil, finish the plate by spooning demi-oil around the micro greens. Serve.
