Arctic Char Bass with BBQ Lentils

Arctic Char Bass
Ingredients:

2 each 3 ounce arctic char fillets, skin on scales removed
2 ounces butter
1 sprig thyme
1 clove garlic
½ shallot

All cryovaced in a bag

BBQ Lentils
Ingredients:

1 cp green lentils
¼ cp onions minced
¼ cp carrots mined
¼ cp celery minced
2 tbsp oil
2 cp chicken stock
3 tbsp bbq spice
1 tbsp butter
4 ounces black pepper barbecue sauce
