Crisp Skate Wing with Sweet Onion Salsa Verde
Ingredients:
Skate Wing:
1 Fillet Skate Wing
White Pepper
Salt
Flour
Olive Oil
Lemon Juice, to taste
1 sprig Thyme
Salsa Verde
4 Tomatillos
1 cup Maitake Mushrooms
½ White Onion
Vegetables
2 ears Corn
1 Lime, juice of
½ cup Cherry Tomatoes
Cilantro sprigs
Salt & Pepper, to taste
1 clove Garlic
¼ cup of Sweet Onion
2 Shishito Peppers
1 Red Pepper
1 Habaninto Pepper
Method of Preparation:
Rough cut the tomatillos. Break apart the mushrooms into small and edible pieces. Place the tomatillos into a pan with olive oil. Dice up the onion and put it in the pan. Add lime juice to the pan. Place all ingredients into a blender.
Add the mushrooms to a separate pan. Make sure it is a hot pan. Caramelize the mushrooms. Add salt. Add the corn to the pan. Add the tomatoes to the pan. Add the garlic, onions and peppers to the pan and turn the heat off.
Keep the Skate Wing cold until ready to cook. Cook top side first. Season the one side with salt and pepper. Place in the flour and completely cover it. Place the fish in a hot pan with a good bit of olive oil. Add thyme and flip the fish once it’s golden brown. Spray some lemon juice on top of the fish.
Plating:
Place the vegetables on a plate. Put the fish on top. Add the salsa.
