Faroe Island Salmon over Warm Bulgur Wheat Salad with Infused Yogurt

Ingredients: 
6-8oz piece of salmon or whole filet and I will cut
3 cups Bulgur wheat- uncooked
10 Brussel sprouts raw
Shelled pumpkin seeds
1 Granny Smith Apple
1 Gala Apple
¼ Cup walnuts
1 TBSP turmeric powder
1 orange
1 Cup Greek Yogurt
¼ C extra virgin olive oil
½ Cup Kosher Salt
½ Black pepper whole
1 gallon Vegetable stock
1 sprig thyme

Method: 
Salmon will be just pan-seared then finished in the oven, using olive oil.
Bulgur wheat is cooked similar to risotto, using veggie stock.
Walnut and pumpkin get toasted
Apple is small diced, Brussel sprouts are chiffonade
Once bulgur has cooled the walnut/apple/pumpkin seed/Brussel are mixed in to form the salad
