Fried Catfish and Crabmeat Ravigot & Not Guilty Cocktail

Fried Catfish
Ingredients:

1 lb Catfish filet
2 cups of buttermilk
4 eggs
2 tablespoons Cajun spice
2 cups of cornmeal
2 cups of flour
salt and pepper

Method:
1. In three mixing bowls: add flour seasoned with salt and pepper to one bowl. Eggs and buttermilk to another bowl and cornmeal and Cajun spice to the last bowl.

2. In large frying pan add canola oil 1/2 way and heat to 350.

3. Dredge fish through flour, then egg wash, then through the cornmeal. Fry until golden brown. Remove and place in warming oven.

Crabmeat Ravigot
Ingredients:

2 cups of Mayonnaise
1/2 cup chopped celery
1 tablespoon minced garlic
1 tablespoon sherry vinegar
1/2 cup chopped parsley
1/4 cup of lemon juice
1/4 cup of Worcestershire sauce
Tabasco
1 lb. Jumbo lump Crabmeat

Method:
In large mixing bowl add first 8 ingredients and mix well. Add crabmeat to the fish with Ravigot.

Method:
Pour all ingredients in shaker with iceand shake well.  Pour in chilled martini glass.
