Monkfish and Crab Soup

Ingredients:
Monkfish
Potatoes
Salt
Crab
Corn
Shallots
Chicken Stock
Cipollini Onions
Ruby Red or Rhubarb Chard
Garlic
Jalapeno
Dandelion Greens
Heavy Cream
Tomato
Parsley
Chives
Green Onion
Lemon

Method of Preparation:
Put some salt into boiling water then add potatoes
Put shallots, corn and chicken stock into pot
Put olive oil into hot pan, add onions, sauté to add color and add chard
Chop garlic and add to onions
Salt and pepper both pans
Put shallots and corn into blender and puree for 2 min then put back into pot

Place red chard tops into pan, add dandelion greens
Add heavy cream to corn
Cut up tomatoes and add to chard, let cook, add parsley and chives
Add in chicken stock and olive oil

Salt & Pepper monkfish, cover in olive oil
Strain potatoes

Add green onions and crab to pot
Start to sear fish on hot oiled pan
Sprinkle chives and parsley on fish
Slice tomatoes and place on top

Cut up and mash garlic, add salt. Mash into paste
Add garlic, olive oil, lemon juice, salt & pepper and greens into bowl
