Seafood Spiedino
Ingredients:
Branzino Fish
Bread Crumbs
Shrimp
Scallops
Brussels Sprouts
Fingerling Potatoes
Lemon
Rosemary
Thyme
Method of Preparation:
Boil brussels sprouts for 10-12min
Score the fish, place into heated pan with olive oil
Sear for about 3min on each side then put in oven for 10-12min at about 450°
Bread shrimp and scallops, sear about 2min with oil and butter
Take fish out of oven, cover in lemon juice and place back in
Throw potatoes in pan with olive oil, salt & pepper.
Add in rosemary, thyme and brussels sprouts
Add capers to hot pan, add little bit of white wine
