Shrimp and Halibut Ceviche

Ingredients:
Shrimp
Halibut
Spring Onion
Smoked Lemon Drop Pepper
Cilantro
Ginger Root
Gold Beet

Method of Preparation:
Dice shrimp into small pieces, add in chopped spring onion
Add in smoked lemon drop pepper, lemon zest and lemon juice
Add cilantro, olive oil, let sit
Slice up halibut. add ground ginger root, orange juice and fennel
Add in rice vinegar and olive oil
Coat beet in olive oil; cook in oven for 2hrs
Add kohlrabi, fennel, spring onion, olive oil rice wine vinegar, salt and pepper in a bowl
