Sirloin Roast & Roasted Garlic Onion Soup

Roasted Garlic Onion Soup
Ingredients:

3 large Onions
6 cloves Garlic
8 cups Chicken Stock
Roux
Parmesan Cheese
Croutons, for garnish

Method of Preparation:
In a large soup pot caramelize onions and garlic cook 5 minutes add the stock and simmer for 1 hr on med-low heat. Garnish w/ Parmesan and croutons.

Overnight slow and low sirloin roast
Ingredients:

5 lb Sirloin Roast
Diced Onions
Celery
Diced Carrots
1 Bay Leaf
2 tbsp Garlic, minced
2 cups Beef Stock

Method of Preparation:
In a Dutch oven add all ingredients and cook overnight at 200 (12 hrs.)
