Sweet Ricotta Chocolate Ravioli and Flourless Chocolate Cake with Dulce de Leche

Chocolate Ravioli Dough 
Ingredients: 
60 grams Cocoa Powder
5 ozs. Water
2 Eggs
75 grams Durum Flour
50 grams Sugar

Sweet Ricotta Filling
Ingredients: 

100 grams Ricotta
30 grams sugar
30 grams chocolate flakes
3 grams mascarpone
Egg wash (egg yolk and water)


Flourless Chocolate Cake
Ingredients: 

Yield (1) 9” spring form pan
Preheat oven to 350⁰
210 grams Unsalted Butter    
210 grams Dark Chocolate  
7 Egg yolks               
14 grams Cornstarch              
168 grams Sugar
7 Egg Whites           
56 grams Sugar

Dulce de Leche
Ingredients: 

1 can Sweetened Condensed Milk

Chocolate Ravioli Dough
Method of Preparation: 

Mix cocoa powder with water. Whip eggs and place all ingredients in mixer with dough hook. Add addition durum flour if dough is too wet. Roll pasta dough into sheets and cut into desired shape and size.

Sweet Ricotta Filling
Method of Preparation

Mix in bowl by hand with spatula. Spoon small amount of filling into center of pasta. Paint edge with egg wash. Top with sheet of pasta pressing down along edges to seal. Cook for 2-3 minutes in gently boiling water and drain.

Flourless Chocolate Cake
Method of Preparation:

Melt together butter and chocolate. Let cool slightly. Whip egg yolks, cornstarch and sugar together until pale yellow and thick. Pour mixture into butter/chocolate mixture and gently fold together. Clean and dry mixer bowl and whip attachment. Whip whites on medium until frothy. Slowly add sugar to the mixer and continue to whip on medium-high until soft peaks form.

Gently fold the soft egg whites into the chocolate/butter/yolks. Continue to gently fold together until combined. Pour into spring form pan. Bake for 30-40 minutes (top will start to crack and no longer look shiny). Run a knife along the outside of the cake to detach from the pan. This will allow the cake to fall evenly. Allow to cool completely, flip cake upside down and remove the base of the spring form pan. Enjoy!

Dulce de Leche
Method of Preparation: 

In saucepan, bring enough water to cover can to a gentle simmer. Place can in water ensuring it remains covered at all times. Flip can over every hour. Cook 4-5 hours depending upon desired richness.
