Arctic Char with Tomato Onion Confit, Sorrel Creme Fraiche and Braised Kale

Ingredients:
White Spanish Onion
Tomatoes
Garlic
Red Russian Kale
Lemon

Method of Preparation:
Add olive oil to pan
Cook diced onion in oil for about 10min
Grate tomatoes then add to onions after cooking
Add 1 tablespoon of sugar to tomatoes, smashed clove of garlic, thyme, 2 bay leaves and a half cup of olive oil cook for 20min on low heat
Add lemon to crème fraiche, then sorrel
Salt and pepper fish, cook char skin side down
Add thyme and crushed garlic
Baste the fish with oil from pan
