Steak on Steak

Recipe: Steak on Steak
Ingredients:

1 NY Strip Steak
1 Cowgirl Steak
3 Shallot (Brunoise)
2tbsp Whole Peppercorns
1 tsp Salt
2Portobello Mushrooms
¼ c Oyster Mushrooms
¼ c Shitake Mushrooms
1 c Red Wine
1 oz Balsamic Vinegar
2 tbsp Olive oil
2 oz Blue Cheese
1 tbsp Tomato Paste
Wooden Steak Skewers

Prep:
Dice Shallot onion

Chop garlic clove
Crush whole peppercorns by taking a large spoon and rocking gently back and forth
Slice Portobello, Shitake, and Oyster mushrooms. Remove gills.

Cowgirl Steak:
Sprinkle salt onto steak
Lay into crushed pepper
Sear steak on both sides in oiled pan to preference
Add three cubes of butter during cooking

Sauce:
Place diced shallots and crushed peppercorn in hot, oiled pan
Add salt and pepper
Add balsamic vinegar
Add red wine
Add tomato paste
Reduce to au sec

Sauté:
In a generously oiled pan sauté a mixture of:
Chopped garlic
Portobello mushroom
Shitake mushroom
Oyster mushroom
Salt & pepper
Vinegar (Balsamic)
Shallots
Butter

NY Strip Steak:
Slice thinly, sate style
Skewer steak slices
Lay skewered steak into steak rub, and add salt to taste.
Fry in oiled pan on both sides

Serving:
Place mushroom sauté on bottom of place
Lay Cowgirl steak on top
Pour on sauce
Add Blue Cheese chunks to top of steak
Finish with NY Strip sate
