Chicken Chili with White Beans, Peppers & Sweet Corn

1 Ground Chicken
2 oz Canola Oil
2 Red and Green Bell Peppers (diced)
1 Yellow Onion (diced)
4 oz Sweet Corn Kernels
8 oz Chicken Stock
2 oz Cilantro (chopped)
18 oz Diced Tomatoes
1 tbsp Salt
1 tbsp Black Pepper
1 oz Cumin
1 oz Chili Powder
1 Scallions (bias cut)
10 oz Cannellini Bean

Method of Preparation:
In a sauté pan, place 1oz canola oil and ground chicken. Cook meat until browned, stirring occasionally.

In a medium stockpot, place 1oz canola oil, bell peppers and onion. Sweat until soft. Add ground chicken and mix. Add chili powder, cumin, salt and pepper. Stir. Add diced tomatoes and chicken stock. Stir until well incorporated. Add beans and stir. Add corn and stir. Let simmer 20 minutes.

Remove from heat and serve in a bowl. Garnish with cilantro and scallion.
