Congdon's Biscuits

Ingredients:
7 lbs All-Purpose Flour
1 1/2 lbs Mild Cheddar Cheese (white or yellow), Shredded
1/2 cup Baking Powder
2 tablespoons Baking Soda
1 cup Sugar
1/2 lbs Margarine
1/2 lbs Butter
2 tablespoons Salt
2 quarts Buttermilk

Method: 
Combine All-Purpose Flour, salt, baking soda, baking powder, sugar and mix together. Add mild cheddar cheese and mix again until cheese is coated in mixture. Add butter and margarine and mix until it is crumbly. Make a pool in the center of the flour mixture and add Buttermilk. Mix together using hands or a mixer. Flour cutting board and place the dough on the board. Flour top of the dough. Roll out dough until it is about 1 inch thick. Pull the sides of the dough together and re-flour the dough.

Get a pan with parchment paper. Spray down paper and sides of the pan. Cut out biscuits from the dough using a cutter with a hole for air so the dough does not stick in the cutter. Put dough onto pan. Put leftover dough back together and cut out more biscuits. When pan is full coat them in an egg wash and place in oven at 325 degrees. Bake for 15-20 minutes. When the biscuits are finished brush melted butter over the top of biscuits.
