Crabmeat Stuffed Shrimp with Creamed Collard Greens & Hurricane Cocktail


3 tablespoons of butter
1 cup chopped onion, celery, red bell pepper
1 tablespoon minced garlic
4 cups crumbled cooled corn bread
1 cup chicken broth
1 cup Parmesan cheese
1/4 cup of lemon juice
1 lb jumbo lump crab meat

In large sauce pan melt butter and sautee chopped vegetables. Add garlic and corn bread. Stir until mixed well. At this point add broth,cheese,and lemon juice and mix well. Finally add crab meat and cool until you can handle. 1 lb. Jumbo Shrimp cleaned, shelled, and devined Make medium size stuffing ball and roll shrimp around stuffing. Repeat and place on baking pan. Drizzle with olive oil and bake @ 400 until shrimp are pink.

Collard Greens

3 tablespoons of butter
4 cups of cooked collard greens
1/2 cup of chopped onion, celery,and bell peppers
1/2 cup chicken stock
1 cup of heavy cream
Cajun spice

In large sautee pan melt butter and sautee vegetables. Add collard greens and cook for 4 minutes. Add stock, cream and Cajun spice reduce liquid by 1/2.

Drink Special:


2 oz. of light rum and dark rum
2 oz. of grenadine
3 oz. Passion fruit

Pour all ingredients in glass with crushed ice and shake.
