Cashew Crusted Local Blue Catfish with a Stone Fruit Relish:
Ingredients:

Catfish
Salt &Pepper
Cashews
Bread Crumbs
Stone Fruit
Red Onion
Flat Leaf Parsley
Olive Oil

Directions:
Season catfish with salt & pepper and roll in cashew crumb mixture equal parts fine chopped cashews and bread crumbs. Saute on low tills golden brown.

Small dice Stone Fruit, red onion, flat leaf parsley toss with olive oil and salt pepper.

Pan Seared Halibut with a Red Quinoa Cake, Shaved Brussels Sprouts and Apples
Ingredients:

Quinoa
Egg
Bread Crumbs
Halibut
Flour
Canola Oil
Brussels
Apples
White Wine
Salt & Pepper
Unsalted Butter

Directions:
Mix fully cooked quinoa with 1 egg fresh bread crumbs sauté tills crispy.

Roll halibut in seasoned flour sauté in canola oil till golden brown on each side.

Shave Brussels and apples into sauté pan add white wine and salt pepper and finish with 2 tbls unsalted butter.
