Pan Seared Cobia with Smoked Paprika Grilled Tofu in a Sweet Chili Sauce

(1) 6oz piece skin on or off
1 Tbls. Olive oil
1 block of Tofu

Sweet Chili Sauce:
1 chili pepper (green or red)
2 garlic cloves
Pinch salt
1/2 tsp. sugar
1Tbls rice vinegar
1 1/2 Tbls. Olive oil
2 green onions
3tsp. Cilantro
1 lime juiced
Cilantro for garnish 

Method of Preparation:
First make the chili sauce by combining chili peppers, garlic, salt, sugar, vinegar and blend until smooth. Mix in chopped green onions, cilantro and olive oil into blended mixture.

For the Tofu:
Lightly dust with the smoked paprika. Heat up grill and lightly spray tofu to keep from sticking.

For the Cobia:
Add a little olive oil to the frying pan , and fry seasoned fish over medium heat  for 3-4 minutes until golden brown color on flesh side down. Turn fish over for 2-3 minutes, basting as you cook.
