Spicy Maldon Sea Salt Crusted Prawn

12 Head on Prawns
2 oz Potato Starch
1 oz Maldon Sea Salt
8 oz Soy Bean oil
1 Head of Garlic Chopped
2 Serrano Chiles
2 Mayer Lemons
1 oz Pea Tops
1 tsp Sesames

Dredge the prawns in the sea salt and potato starch.

Sauté in the soy bean oil.

In a separate hot pan, sauté the garlic and the chilies.

Then add the prawns and more sea salt remove.

To Plate- place the prawns on top of the sea weed and place the pea top salad on top. Finnish with Mayer lemon juice and sesame seeds.
