CHILDREN’S RECIPE: Chickpea Roasted Tomato Puree with Grilled Flat Bread

16 oz Caned Chickpeas
2 Red Beefsteak Tomatoes (2 garlic cloves, 4 sprigs of thyme, 4 oz olive oil)
6 Almonds
½ tsp Smoked Paprika
½ tsp cumin
1 tbsp Sea Salt

Method of Preparation:
First roast the tomatoes. Preheat the oven to 350. Cut the tomatoes in half and place in a bowl. Then chop the two cloves of garlic, Remove the leaves from the thyme, and put in to the bowl. Toss together and pot on a sheet pan. Roast place pan in the 350 oven for 15 minutes. Place the tomatoes and let cool. In a food processor put the chickpeas, almonds, and tomatoes and seasoning blend smooth.

Flat Bread:
1 cup Warm Water 100F
½ oz Dry Yeast
2 cups All Purpose Flour
1 tsp Sugar
1 tsp Salt
2 oz Olive Oil

Method of Preparation:
Mix the water and yeast together until diluted. Then add the flour, sugar, salt, and olive oil in to a mixing bowl. Mix for 4 minutes. Let rise for 20 minutes. Again you can buy pizza dough ready to go. Roll the dough out and rub with olive oil and place on grill. Grill both sides cross hatching making an X from the grill marks.

FAMILY RECIPE: Grilled Shrimp with Chickpea Flat Bread

8 U/15 Shrimp
2 tsp Curry Powder
½ tsp Smoked Paprika
2 oz Olive Oil
Sea Salt
2 oz Arugula
1 Lemon

Method of Preparation:
Mix the seasoning, olive oil, and he shrimp. You can grill or in a hot skillet. Roast until cooked. I like to under cook a little because it will continue to cook.

Take the grilled flat bread and spread the puree of chickpeas. Chop some roasted tomato and place the shrimp on top. And place the arugula on top with lemon.
