Steak Burger:
1 lb of Cathead Ranch Ground Steak
2 Pieces of Smoked Pork Belly or Bacon
Cooper cheese
Seasoning & Brioche or Crusty Rolls
Method:
Grill patties on both sides for 5 min then bake at 450 for 10 (medium rare.) Top with cheese and bake for 3 min. Assemble burger w/ bacon and roll.

1 lb Colossal Crab Meat
4 Hot House Tomatoes

Dressing:
1/2 olive oil
1/4 cup white balsamic vinegar
2 tbls minced shallots
3 tbls Creole or ground mustard
Method:
In a blender place all ingredients except the oil and blend. While blender is running drizzle in the oil . Blend till thick. Assemble salad ingredients and top w/ dressing.
32 oz Cowboy Steak
Method:
Preheat oven to 500. Let steak come to room temperature for 1 hr. Get a large sautée pan hot w/ olive oil to coat the pan. Season steak and brown on both sides for 5 min. Place steak in oven for 15 minutes. Medium rare 115 internal temp.

1 Bag of Baby Spinach
1/2 Heavy Cream
1/2 Parmesan Cheese
2 oz Sambuca
Salt and Pepper
Method:
In a large sautée pan on med high place spinach and cream cook till partially wilted add Sambuca and stir, and Parmesan and mix.
