1 pc. Konbu
250 ml Red rice vinegar
250 ml Rice vinegar
100 g Sugar
100 g Salt
Method:
Mix ingredients to dissolve sugar and salt.
Hot Oil Sashimi
Ingredients:
5 pc Fluke
25 ml Lime Juice
50 ml Soy Sauce
Ginger
Chives
Garlic
Olive oil
Method:
Mix lime-juice and soy sauce. Season fish with ginger, garlic, and chives. Dress with lime/soy ponzu. Heat oil to smoking. Pour hot oil over fish, and serve immediately.
