CHILDREN'S RECIPE: Roasted Eggplant Dip with Pita
1/2 Spanish Onion
3 Cloves of Garlic
1 Diced Tomato
Take 1-diced eggplant and sear in pan, add half diced Spanish onion, 3 cloves of garlic, 1 diced tomato, chives, parsley, spinach, sauté ingredients down. Add lemon juice, sherry vinegar and Panko breadcrumbs. Then put in food processor. Serve with pita chips.

Build your lasagna layers with sliced roasted eggplant, marinara sauce, pasta sheets and spinach. Use eggplant dip between layers. Finish off in oven.
