Fruit Roll Ups & Gazpacho

CHILDREN’S RECIPE: Cantaloupe and Honey Fruit Roll Ups
Ingredients:

4 cups Cantaloupe, chopped (about 1 melon)
½ cup Water
Honey, as needed
Lemon Juice, as needed

Method of Preparation:
Pre heat oven to 140 F. Place melon and water in a saucepot and bring to a simmer for 10-15 minutes until melon softens. Mash in the pot with a potato masher or immersion stick blender.

Taste mashed melon and adjust to your liking with honey and lemon. Transfer to a food processor and puree. Taste once again and adjust seasoning with honey and lemon if needed.

Turn puree out onto a baking sheet lined heavy-duty plastic wrap (the kind you can microwave.)

Spread mixture evenly over baking sheet and place in oven for 8-12 hours (this is something best done overnight.) Roll ups are done when the top is no longer tacky. Remove from oven and let cool. Cut on plastic wrap to desired size, roll up and refrigerate.


FAMILY RECIPE: Cantaloupe Gazpacho with Seared Shrimp Skewers and Crispy Prosciutto
Ingredients:

4 cups Cantaloupe, chopped (about 1 melon)
¾ cup Vidalia Onion, diced
1 cup Cold Water
1 tbsp White Balsamic Vinegar
1/3 cup Extra Virgin Olive Oil
Salt, to taste

Method of Preparation:
Place Cantaloupe, onion, ½ of the water and vinegar in a blender and puree. Adjust consistency with remaining water. With blender running drizzle in oil. Adjust seasoning with salt. Chill well before serving.


Ingredients:
Crispy Prosciutto:

4 slices Prosciutto, thin

Method of Preparation:
Pre heat oven to 425F. Arrange prosciutto on a baking sheet fitted with a drying rack

Bake until very crispy about 6-7 minutes. Remove from oven let cool completely on paper towels. Shred up into ½” pieces.

Ingredients:
Shrimp Skewers:
12 each size 21/25 raw shrimp
4 10” long Bamboo Skewers (any heat resistant material will do)
2 tbsp Olive Oil
1 tsp Parsley, chopped
Fresh Black Pepper and Kosher Salt, to taste


Method of Preparation:
Heat a heavy bottomed sauté pan on medium high heat. Combine olive oil, parsley and shrimp in a mixing bowl and toss to combine. Skewer the shrimp evenly between 4 skewers. Season with salt and pepper and add to hot pan. Sear on one side 2-minutes. Turn shrimp and sear an additional 1-minute. Remove from heat and set aside
