Cheesecake & Shrimp Ceviche

CHILDREN’S RECIPE: Orange Cheesecake Mousse
Ingredients:

4 cups Cream Cheese
1 cup Sour Cream
1 cup Heavy Cream
½ cup Sugar
4 Eggs
½ cup Melted White Chocolate
2 pc Gelatin Sheets

Method of Preparation:
In the bowl of a stand mixer, mix together cream cheese, sugar, and sour cream. Mix with the paddle attachment until light and airy. Add heavy cream and eggs and stir to combine. Place in a 9” round cake mold and bake at 350 degrees until just set. Remove from the oven and immediately place contents in the mixing bowl. Add white chocolate and bloomed the gelatin. Stir to combine. Refrigerate until ready to use.

To Finish:
1 Orange, cut into segments
¼ cup toasted and chopped pistachios
1 cup purchased speculoos cookies
¼ cup candied orange zest

Place mousse in the bottom of the bowl. Top with orange segments, pistachios, and speculoos cookies.


FAMILY RECIPE: Ecuadorian-Style Shrimp Ceviche
Ingredients:
Poached Shrimp:
1-gallon water
3 tbsp Freshly Squeezed Orange Juice
2 cloves Garlic, crushed
3 tbsp Kosher Salt
1# Fresh Large peeled and deveined Shrimp, tails removed


Method of Preparation:
Combine all ingredients except for the shrimp in a large stockpot. Bring it to a simmer. Add shrimp and cook until shrimp are just firm – be careful not to overcook. Remove shrimp from water and place in a bowl of ice water to cool thoroughly. Once cool, remove from water and reserve for later use

Ingredients:
Ecuadorian Ceviche Sauce:
6 Plum Tomatoes, halved
½ Red Fresno Chile, halved, seeds removed
½ cup Sour Orange Juice
2 tbsp Lime Juice
2 tbsp Tomato Juice
1 tbsp Ketchup
1 tbsp Chopped Cilantro
1 tbsp Agave Nectar
2 tbsp Extra Virgin Olive Oil
Salt, to taste


Method of Preparation:
Heat a saute pan over medium-high heat. Place tomatoes, cut side down in a pan and cook until tomatoes are well charred on the cut side. Remove from heat and place in blender. Add all other ingredients to a blender and blend until smooth. Reserve for use.


To Finish:
1 orange, cut into segments
¼ cup green onion, sliced thinly
1 cup popped popcorn
¼ cup shallots, finely minced
¼ cup diced tomato

In a large mixing bowl, combine ceviche sauce with orange segments, green onions, shallots, and diced tomato. Season to taste. Add shrimp and coat thoroughly. Spoon shrimp and sauce into service vessels and garnish with popcorn.

Fruit Roll Ups & Gazpacho

CHILDREN’S RECIPE: Cantaloupe and Honey Fruit Rolls
Ingredients:
1 Cantaloupe, chopped
½ cup Water
Honey to taste
Lemon Juice to taste

Method of Preparation:
Combine cantaloupe and water in a covered saucepan and bring to a simmer for 10-15 minutes until melon softens. Mash with an immersion blender, add lemon juice and honey. Spread mixture evenly onto baking sheet lined with heavy-duty plastic wrap. Bake at 140F for 8-12 hours, this may be done overnight. Roll ups are done when the top is no longer tacky. Remove from oven and let cool. Cut on plastic wrap to desired size, roll and refrigerate.


FAMILY RECIPE: Cantaloupe Gazpacho with Seared Shrimp Skewers

Cantaloupe Gazpacho:
Ingredients:
4 cups Cantaloupe, chopped
¾ cup Vidalia Onion, diced
1 ½ tbsp White Balsamic Vinegar
1 cup Cold Water
¾ cup Extra Virgin Olive Oil
Salt to taste
4 slices Prosciutto

Method of Preparation:
Place Cantaloupe, onion, vinegar and half of the water in a blender and purée. Adjust consistency with remaining water. With blender running drizzle in oil. Adjust seasoning with salt. Chill well before serving.

Arrange prosciutto on a baking sheet fitted with a drying rack. Bake at 425F for 6-7 minutes until crispy. Cool on paper towels. Garnish Cantaloupe Gazpacho with shredded prosciutto to serve.

Seared Shrimp Skewers:
Ingredients:
12 Shrimp, peeled and deveined
2 tbsp Olive Oil
1 tsp Parsley, chopped
Kosher Salt, Black Pepper to taste


Method of Preparation:
Heat a heavy bottomed sauté pan on medium high heat. Combine olive oil, parsley and shrimp in a mixing bowl and toss to combine. Skewer the shrimp evenly between 4 skewers. Season with salt and pepper and add to hot pan. Sear on one side 2 minutes. Turn shrimp and sear an additional 1 minute. Remove from heat and serve with soup.

Cereal & Shrimp

CHILDREN’S RECIPE: Blueberry Brown Rice Cereal
Tempura Batter:
Ingredients:
¼ cup Brown Rice Cereal, fine
1½ cups Seltzer Water
Salt to taste

Method of Preparation:
In a bowl whisk seltzer with the brown rice cereal until very smooth. Add in salt. Let sit for 10 minutes.

Blueberry Brown Rice Cereal:
Ingredients:
½ cup Milk
½ cup Blueberries
½ cup Brown Rice Cereal, fine
¼ cup Blueberries
2 tbsp Tempura Batter
2 tsp Olive Oil
1 tbsp Puffed Brown Rice

Method of Preparation:
Bring the milk and blueberries to a boil. Pour blueberry milk mixture into a blender and puree. Pour puree back into the pot and add the brown rice cereal and stir until creamy. To a bowl add a handful of fresh blueberries pour tempura batter over top. In a pan, heat a drizzle of olive oil over medium-high heat, until hot and shimmering. Carefully add tempura blueberries, cook until browned. Drain on paper towels. Put cereal in bowl and garnish with tempura blueberries and puffed brown rice.


FAMILY RECIPE: Creamy Brown Rice Cereal with Roasted Mushrooms and Crispy Shrimp
Ingredients:
½ cup Milk
½ cup Brown Rice Cereal
2 tbsp Olive Oil
½ cup Mushrooms, sliced
6 Shrimp, cooked, peeled and deveined
Tempura Batter, from children’s recipe
1 tbsp Parsley, chopped
1 tbsp Puffed Brown Rice


Method of Preparation:
Bring the milk to a boil, once boiling add brown rice cereal, reduce heat cook until creamy, stirring constantly. In a pan, heat olive oil over medium heat, until hot and shimmering. Add mushrooms, cook until brown, stirring occasionally about 5 minutes. Pat the shrimp dry with paper towels. Place in a large bowl, season with salt and pepper and coat with tempura batter. In a separate pan, heat a thin layer of oil over medium-high until hot and shimmering. Carefully add tempura shrimp, cook until the shrimp are slightly opaque. Drain on paper towels. Lay the brown rice cereal on a plate, top with mushrooms, shrimp and sprinkle with parsley and brown rice cereal.

Hummus & Pasta

CHILDREN’S RECIPE: Chickpea Edamame Hummus Monster
Ingredients:
2 cups Chickpeas, cooked
1 cup Edamame Peas, blanched
2 tbsp Tahini
3 tbsp Canola Oil
1 tbsp Lemon Juice
Salt to taste
Vegetables/Olives and Veggie Chips to Garnish

Method of Preparation:
In a food processor, puree all ingredients until very smooth and creamy. Form into a 3-inch circle shape. Make eyes with cucumber slices and black olives. Make mouth/teeth with carrots. Make hair with veggie straws and sticks. Feel free to create your own.


FAMILY RECIPE: Chickpea Pasta with Chorizo, Shrimp, Tomatoes & Herbs
Ingredients:
2 tbsp Olive Oil
4 oz Dry Spanish Chorizo/Sausage, diced
2 tbsp Butter
4 cloves Garlic, chopped
1 can Chickpeas/Garbanzo Beans, drained and rinsed
½ tsp Red Chile Flakes
½ lb small Shrimp, cooked, peeled and deveined
2 tbsp White Wine
1 can Whole Peeled Tomatoes, chopped
½ cup Chicken Broth
¾ lb Chickpea Flour Penne, cooked
½ tsp Salt
1 tbsp Basil, chopped
1 tbsp Parsley, chopped
2 tbsp Parmesan Cheese, shredded fine

Method of Preparation:
In a large frying pan cook chorizo in olive oil on medium heat until chorizo is slightly brown. Add butter, garlic, chickpeas and chili flakes, cook and stir until fragrant, 1-2 minutes. Add shrimp, white wine, tomatoes, chicken broth and pasta. Season and bring to a boil. Reduce heat and cook until chickpeas are soft.

Funnel Cake & Avocado Toast

CHILDREN’S RECIPE: Tangerine Funnel Cake
Ingredients:

2 Egg Yokes
2 cups Milk
2 cups Flour
Pinch of Salt
1 tsp Baking Powder
1 tbsp Olive Oil
2 Egg Whites
1 Tangerine, supremed
Powdered Sugar to taste

Method of Preparation:
Whisk egg yolks and mix in two cups of milk, flour, a pinch of salt and baking powder. Whisk the egg whites in a bowl until stiff peaks form and fold into mixture. Pour the batter to form like a funnel cake into pan heated with oil and cook until golden brown. Top with tangerine slices and powdered sugar to serve.


FAMILY RECIPE: Avocado Toast with Shrimp, Radish, Onion and Tangerine
Ingredients:

1 Small Loaf of Bread
1 Avocado
1 tsp Lime Juice
½ cup Arugula
2 tbsp White Onion, sliced
1 tbsp Radish, sliced
3 Shrimp, cooked and sliced
1 Tangerine, supremed
1 tbsp Olive Oil


Method of Preparation:
Slice bread and toast. Cut avocado and mix with lime juice. In a separate bowl, add Arugula, white onion, and radish. Cut shrimp in half and add to bowl with tangerine supremes. Add a little bit of oil and mix. Spread the avocado on the toast. Garnish the toast with the mixture from the bowl.

Corn Pancakes & Shrimp Salsa

CHILDREN’S RECIPE: Multigrain Corn Pancakes with Kettle Corn Sunflower Butter
Ingredients:

2 cups Multigrain Complete Pancake Mix
½ cup Soda Water
1 cup Corn
4 oz Butter
1 tsp Dark Brown Sugar
Pinch of Cinnamon
Heavy Pinch of Coarse Salt

Method of Preparation:
Make Sunflower Butter for pancakes and garnish, whip butter with, coarse salt and brown sugar. Sauté corn in a pan with a bit of sunflower butter season with cinnamon, salt and brown sugar. Butter for garnish. Make pancakes per box instructions, use soda water instead of water. Add sautéed corn. Stack pancakes, garnish with Kettle Corn Sunflower Butter and maple syrup.


FAMILY RECIPE: Grilled Corn, Shrimp and Edamame Salsa
Ingredients:

3 ears Corn, unshucked
1 Sweet Onion, peeled and minced
1 Poblano Pepper, roasted and diced
1 Red Pepper, roasted and diced
2 cups Edamame, blanched
¼ cup Extra Virgin Olive Oil
2 tbsp Lemon Juice
3 tbsp Sherry Vinegar
1 tsp Smoked Paprika
½ tsp Cumin, ground and toasted
3 sprigs Parsley, chopped
Pinch of Salt, Pepper
2 cups Shrimp, cooked


Method of Preparation:

Place corn on a hot grill and cook on all sides. Allow cooling, shuck and cut off the cob. Toss with remaining ingredients. Serve at room temperature.

Muffins & Shrimp Skewers

CHILDREN'S RECIPE:  Pineapple Stuffing Muffins

Ingredients:  
½ cup Butter
½ cup Sugar
4 Eggs
2 cups Pineapple, peeled and puréed coarsely
5 slices High Fiber White Bread, cubed
Whipped Cream to garnish
Strawberries, sliced; to garnish

Method of Preparation:  
Preheat Oven to 350F. In a bowl, over a pot of boiling water, mix butter and sugar until it starts to melt. Add eggs one at a time. Fold in pineapple and bread. Bake in 4 oz ramekins or muffin tins for 15- 20 minutes. Allow to cool slightly and serve. Garnish with whipped cream and strawberries.


FAMILY RECIPE: Shrimp Skewers with Compressed Pineapple
1 Pineapple, cubed
Pinches of Maldon Salt, Black Pepper
1 Lime, zest
1 tbsp Extra Virgin Olive Oil
1 Lime, juice of
Red Pepper Flakes to infuse oil and to garnish
8 Shrimp, peeled, deveined and cooked
¼ cup Watercress Leaves
¼ cup Cilantro Leaves, chopped
3 tbsp Jalapeno Peppers, sliced thin
¼ cup Carrots, julienned

 

Method of Preparation:
Combine a little bit of olive oil, sea salt, black pepper, lime zest and pineapple. Place in plastic bag to vacuum seal. Combine red pepper flakes and lime juice to olive oil, dip shrimp in chili lime oil. Arrange shrimp on skewers with pineapple cubes. Grill on medium heat until shrimp are finished cooking and pineapple is marked. Mix watercress, cilantro, jalapeno, carrot, salt and pepper and drizzle with chili lime oil. Place skewers over salad and garnish with red pepper flakes.

Puree & Salad

CHILDREN’S RECIPE: Baby Food
Ingredients:
Avocados
Water/Breast Milk to taste; check with your doctor about water in your area
Lemon Zest, Cilantro, Garlic or Onion Powder to taste; as baby’s palate develops

Method of Preparation:
Cut the avocado in half, remove pit and scoop out the inside. Place the avocado flesh in a food processor or blender and purée until smooth. As the baby develops you may use a fork to mash the avocado. You may add water or breast milk for desired consistency. May be stored in refrigerator or freezer. Lemon zest, cilantro, garlic or onion powder may be added as baby progresses.


FAMILY RECIPE: Shrimp with Avocado, Mango & Black Bean Salad
Ingredients:
2 Avocados, pitted, peeled and diced  
3 cups Black Beans, cooked
2 cups Red Onion, sliced
1 Mango, pitted, peeled and diced
1 tbsp Cilantro, sliced
2 Limes, supremed and juice of
1 lb Shrimp, cleaned, deveined and cooked
1 tbsp Salt to taste

Method of Preparation:
Combine avocado, black beans, red onion and mango. Sprinkle in cilantro, add lime supremes, lime juice and blended oil. Season shrimp with lime juice and salt. Plate salad and top with shrimp.
