Risotto Two Ways

Ingredients: 
1.) Olive Oil
2.) Shallots
3.) Garlic
4.) Little Neck Clams
5.) Muscles
6.) Cold Water Lobster Tails
7.) White Wine
8.) Lobster Stock
9.) Tomato Sauce
10.) Salt
11.) Pepper
12.) Shrimp
13.) Butter
14.) Calamari
15.) Filets
16.) Rice
17.) Parmesan Cheese
18.) Rosemary
19.) Marcellin Cheese
20.) Brussel Sprouts

Method: 
1.) Fry the shallots in the olive oil
2.) Add Garlic to the pan with the Shallots
3.) Add Fresh Little Neck Clams to the pan with the Shallots and Garlic
4.) Add muscles to the pan with the clams, shallots, and Garlic
5.) Cut the lobster tails in half
6.) Add White Wine to the pan with the muscles, clams, etc.
7.) Add Lobster Stock to the pan with the muscles, clams, etc
8.) Add Marina Sauce to the pan with the muscles, clams, etc - stir
9.) Put pan in oven on about 450 degrees for about 8 minutes
10.) Season the lobster tails with salt and pepper
11.) Put the lobster tails in a pan to fry and then also in the oven to finish baking
12.) Season the shrimp with salt and pepper
13.) Fry the shrimp in a pan with olive oil and Butter
14.) In a new pan, fry the calamari in olive oil
15.) In a new pan, fry the filets in olive oil
16.) Once there’s a sear on the filets, put them in the oven to finish cooking
17.) In two new pans, fry shallots and garlic in olive oil
18.) Add rice to each of the two pans that have garlic and shallots in
19.) Add white wine to both pans that have rice, garlic, and shallots in
20.) Add mushrooms and chicken stock to one pan, add lobster stock to the other
21.) Take the Calamari and add it to the mix of muscles, clams, etc.
22.) Add Parmesan cheese to the risotto that has mushrooms and chicken stock
23.) Put Basil in the fish risotto (the pan with lobster stock)
24.) In a new pan (will be used to make sauce), fry shallots in a pan with olive oil and then add red wine
25.) Add rosemary and thyme to the meat risotto
26.) Add butter to the pan that is being used to make sauce (has red wine and shallots in)
27.) Add Marcellin cheese to both pans of risotto
28.) Add some chicken stock to the pan being used for sauce
29.) Add Brussel sprouts the pan being used for sauce
30.) Warm up any food that may have gotten cold
31.) Add Basil to the seafood mix (clams, muscles, etc) - mix
32.) Plate
