Preheat oven to 300 degrees. Peel and wash carrots and remove stem. Toss with a small amount of olive oil. Place carrots on a baking sheet and roast for 30 min. You can also steam carrot pieces in a steamer basket or pot of water. When carrots are done purée in a food processor or blender with water, breast milk or formula. Freeze leftover baby food in ice cube trays and transfer to Ziploc bags when done. The cubes can be reused for future feedings, smoothies for the family or in baked goods such as muffins, cookies, pancakes and breads. They can also be added to meatballs, hamburger patties, and meatloaves or used in dipping sauces. Freeze purée in small popsicle trays and use as teething devices or place purée in reusable squeeze pouches when the baby matures and develops the coordination and strength to feed himself.
FAMILY RECIPE: Bronzino with Carrot Vinchy
Method of Preparation:
Place the bronzino in a pan with butter. Add salt and pepper as needed. Sweat the leaks and parsley and place into the pan. Slice two-three carrots and place into another pan with olive oil, coconut nectar and let them cook. Cover the carrots to let them steam with parchment paper on top. Squeeze fresh lemon on top of the fish for more flavor.
To plate: put carrots on the bottom with the fish on top. Squeeze some fresh lemon to bring out the flavors.
