Macaroni & Tuna

CHILDREN’S RECIPE: Brown Rice Macaroni and Cheese with Crispy Brown Rice Cereal Crust
Ingredients:


3 tbsp Butter
3 tbsp Brown Rice Flour
2 cups Milk
½ cup Cheddar Cheese, shredded
½ cup Parmesan Cheese, shredded
½ lb Brown Rice Macaroni, cooked
Mild Cheddar Cheese, shredded; for crust
Parmesan Cheese, grated fine; for crust
Brown Puffed Rice Cereal; for crust
Salt, Pepper to taste

Method of Preparation:
Melt butter, add flour and milk to make a standard roux. Blend in cheddar and Parmesan cheese, cook until sauce forms. Add cooked pasta. Continue cooking until heated through. Place in baking dish. Top with cheddar, Parmesan and brown rice cereal. Bake at 350F for 12 minutes until slightly browned.


FAMILY RECIPE: Crunchy Spicy Tuna with Brown Rice Cereal
Spicy Japanese Mayonnaise:
Ingredients:
3 tbsp Mayonnaise
1 tbsp Soy Sauce
1 tbsp Rice Vinegar
1 tbsp Siracha to taste
1 tbsp Red Tobiko to taste

Method of Preparation:
Mix all ingredients to form sauce.

Tuna Tartare:
½ lb Japanese Ground Tuna or Fresh Tuna, hand chopped
3 tbsp Mayonnaise
1 tbsp Soy Sauce
1 tbsp Siracha Hot Sauce to taste
1 tbsp Rice Vinegar
1 tbsp Sesame Oil
2 tbsp Shallots, diced
¼ cup Chives, chopped
2 tbsp Sesame Seeds, toasted
½ cup Brown Puffed Rice Cereal
Wonton Chips

Method of Preparation:
Mix all ingredients, form in two small ring molds. Dress plate with Spicy Japanese Mayonnaise. Serve with Wonton Chips.

CHILDREN’S RECIPE: Blueberry Brown Rice Cereal
Tempura Batter:
Ingredients:
¼ cup Brown Rice Cereal, fine
1½ cups Seltzer Water
Salt to taste

Method of Preparation:
In a bowl whisk seltzer with the brown rice cereal until very smooth. Add in salt. Let sit for 10 minutes.

Blueberry Brown Rice Cereal:
Ingredients:
½ cup Milk
½ cup Blueberries
½ cup Brown Rice Cereal, fine
¼ cup Blueberries
2 tbsp Tempura Batter
2 tsp Olive Oil
1 tbsp Puffed Brown Rice

Method of Preparation:
Bring the milk and blueberries to a boil. Pour blueberry milk mixture into a blender and puree. Pour puree back into the pot and add the brown rice cereal and stir until creamy. To a bowl add a handful of fresh blueberries pour tempura batter over top. In a pan, heat a drizzle of olive oil over medium-high heat, until hot and shimmering. Carefully add tempura blueberries, cook until browned. Drain on paper towels. Put cereal in bowl and garnish with tempura blueberries and puffed brown rice.


FAMILY RECIPE: Creamy Brown Rice Cereal with Roasted Mushrooms and Crispy Shrimp
Ingredients:
½ cup Milk
½ cup Brown Rice Cereal
2 tbsp Olive Oil
½ cup Mushrooms, sliced
6 Shrimp, cooked, peeled and deveined
Tempura Batter, from children’s recipe
1 tbsp Parsley, chopped
1 tbsp Puffed Brown Rice


Method of Preparation:
Bring the milk to a boil, once boiling add brown rice cereal, reduce heat cook until creamy, stirring constantly. In a pan, heat olive oil over medium heat, until hot and shimmering. Add mushrooms, cook until brown, stirring occasionally about 5 minutes. Pat the shrimp dry with paper towels. Place in a large bowl, season with salt and pepper and coat with tempura batter. In a separate pan, heat a thin layer of oil over medium-high until hot and shimmering. Carefully add tempura shrimp, cook until the shrimp are slightly opaque. Drain on paper towels. Lay the brown rice cereal on a plate, top with mushrooms, shrimp and sprinkle with parsley and brown rice cereal.

Porridge & Pancakes

CHILDREN’S RECIPE: Baby Food “Porridge”
Ingredients:
¼ cup Brown Rice Cereal, ground
1 cup Water
Breast Milk/Formula to taste; check with your doctor about water in your area
Ginger, Cilantro, Garlic or Onion Powder to taste; as baby’s palate develops

Method of Preparation:
Grind brown rice in a food processor, this will take a little bit of time. Boil water in a medium pot and add the ground brown rice. Simmer and whisk frequently to avoid clumping. Remove from pot and allow to cool. You may add breast milk or formula for desired consistency. May be stored in refrigerator or freezer. Ginger, cilantro, garlic or onion powder may be added as baby progresses.


FAMILY RECIPE: Brown Rice Cereal Pancakes with Caramelized Blueberries & Figs
Ingredients:
1 cup Brown Rice Flour
½ tsp Baking Soda
1½ tsp Baking Powder
½ tsp Salt
1 cup Whipped Cream
½ cup Sour Cream
1 tbsp Vanilla Extract
2 tbsp Butter, melted
2 Egg Whites
1 tsp Lemon, zest of
1 cup Blueberries
6 Figs, halved
4 tbsp Honey

Method of Preparation:
In a bowl, mix the brown rice flour, baking soda, baking powder and salt. Fold in whipped cream, sour cream, vanilla and butter. Whisk the egg whites, until stiff peaks form. Add egg whites to the mixture for a fluffier pancake. Add a little lemon zest. Form batter into pancakes on greased skillet and cook for 2 minutes until bubbles form and some burst, flip, cook until brown.

Heat blueberries in a pan, add honey. Cook until caramelized. Cook the figs in honey as well. Stack Pancakes on warm plate and sprinkle tower with caramelized blueberries, figs and honey.
